Fregola with clams

The fregola with clams is a typical first course of Sardinian cuisine. When it comes to traditional dishes, there is no single recipe for preparing fregola with clams. The many versions that are found in some cases provide for the use of very little tomato sauce instead of the concentrate and the addition of chilli.

- 1 kg of clams - 2 cloves of garlic - 1/2 glass of extra virgin olive oil - 2 tablespoons of tomato paste - fresh chopped parsley - 1 l and 1/2 of water - 6 spoons of fregola or fregolina
